Sweet Potato Nachos with Guacamole
|
Most nachos recipes rely on a bed of tortilla chips. This one swaps the chips out for… you guessed it, sweet potatoes! This adds a lovely sweet flavor, plus a healthy dose of fiber and vitamin A-producing beta-carotene. They’re also a source of potassium, an important mineral that supports healthy muscle and nerve function.
Then there’s the guacamole. Avocados – rich in heart-healthy monounsaturated fats, fiber, and folate — are a nutritional powerhouse. They taste pretty good too!
And because no nacho is complete without something savory and satisfying, ground beef adds protein, iron, and vitamin B12. (Of course, feel free to swap the beef out for tofu or tempeh, if you don’t eat meat and still want to get a protein dose.)
Top it all with salsa, cilantro, and a squeeze of fresh lime, and you’ve got plenty of bright, fresh flavor to balance those hearty fall ingredients.
The best part: This recipe comes together in under an hour, making it an easy choice for a weeknight when you want something comforting but a little more nutrient-packed than your standard nachos.
