Heyyy hey friend,
I'm currently in the bittersweet spot between enjoying the fleeting hot summer days and realizing they're fading faster than I'd like, while also holding onto the anticipation of cozy season. That also means I'm desperately taking advantage of every outdoor event I can, feeling like somehow I let summer slip right on by.
First up: outdoor concerts! From snagging a last-minute ticket to see my favorite, Noah Kahan, play at Target Field, to checking out the new amphitheater outside of the city to see Matt Nathanson, The Barenaked Ladies, and Train, and cozy music on the farm in the neighborhood.

What I've been making:
- To be honest, because I'm constantly testing recipes (and that's a lot of food for one person already), I don't often make recipes repeatedly. But...these poke bowls have been a weekly thing - a delicious way to get a variety of veggies, so easy to throw together, and so dang tasty!
- My favorite herby white beans on toast, too. Do you want the recipe?!
- What I've been watching: The Other Two. Quite outrageous at times, but just the lighthearted show I needed this month.
- What I've been reading: The Most Fun We've Had by Claire Lombardo...now halfway through!
- Restaurant of the month: Bucheron - finally! This James Beard 2025 Best New Restaurant lived up to the hype!
- The event of the summer: More Than Lit - an art auction and community event to support Read with Me MN in getting culturally relevant books into the hands of kids.
What's been the best part of your summer so far? ☀️
Until next time, happy eating!
Becca
