I think the Eagle Ridge trail would be a good choice for your group. The path is well marked and offers several scenic overlooks about halfway through. We did it last fall and the foliage was beautiful. The total loop is around 4 miles with moderate elevation gain, so it should be manageable for most fitness levels. There are a few benches along the way where you can rest and take in the views. Parking at the trailhead can fill up on weekends, so arriving before 9am is a good idea. Bring plenty of water as there aren't many water fountains on the route.

The lentil soup recipe you asked about turned out quite well. I used green lentils instead of brown because they hold their shape better during simmering. Adding a splash of lemon juice at the end really brightens the flavors. I also threw in some diced carrots and celery along with the onions and garlic. The key is to let it simmer for at least 45 minutes so the vegetables become tender and the broth develops depth. A teaspoon of cumin and some smoked paprika give it a warm, earthy flavor. Serve it with crusty bread and a drizzle of olive oil on top.
