This week's meal plan includes: the best meatballs in tomato sauce served with killer garlic bread, a Greek cobb salad, sweet soy glazed chicken over sticky rice, steak fajitas with chunky guac, blackened salmon with coconut rice and sauteed garlicky spinach, and golden and crispy zucchini fritters!
The Main Dish:

• Thursday Main: Steak Fajitas - A homemade fajita seasoning blend and killer marinade infuses bold flavor into thin cut steak for these fast and easy steak fajitas made in a skillet.
• Friday Main: Pan-Seared Blackened Salmon - Seared in a hot cast iron skillet or cooked on the grill, my easy-to-make blackened seasoning gives these buttery, flaky fillets the perfect amount of flavorful heat.
