Roast potatoes are a cherished accompaniment that countless Britons eagerly anticipate with their Sunday dinner, yet they frequently emerge from the oven soggy rather than golden and crunchy.

What many home cooks fail to realise is that achieving crispiness begins with the boiling process, and it involves more than simply placing them in a saucepan with water.

Maria Koutsogiannis, founder of Food by Maria, has shared that the secret to achieving flawlessly crunchy roast potatoes involves adding a teaspoon of baking soda to the boiling water.

She explained: "It has taken me years to try and figure this out, and I finally found the trick to nailing that perfect potato consistency. My secret weapon for nailing that consistency? Boiling and baking soda."

 

 
 
 
 

Ingredients

Six medium russet potatoes

One tablespoon of baking soda

Three tablespoons of olive oil

Three garlic cloves (grated)

One tablespoon of butter

One tablespoon of onion granules

Three tablespoons of thyme
