You wanted a ratio, so here is what worked for the tomato rows last season. Roughly two parts screened topsoil, one part composted leaf mold, and one part coarse sand mixed with a little perlite. It drains well but does not dry out too fast when the afternoon sun hits. For the herb spiral, you can go lighter on the sand and add more crushed eggshells and wood ash. I also found that the cilantro bolted early because the beds stay warm until late evening near the brick wall. Maybe we shift the cilantro to the north side near the rain barrel. The volunteer group meets Saturday morning around eight, and we usually bring our own trowels and gloves. If you want to test the pH before we amend anything else, I have a simple probe kit. And bring a bucket for compost tea if you want some.

Yes we still have the Tuesday evening slot open for the bread baking group, and the convection oven was serviced last month so it holds temperature better now. You asked about proofing space too. We can set up the long table near the window, but the draft from the back door can make dough rise unevenly, so maybe plug the gap with a rolled towel. The mixing bowls are on the second shelf above the sink, and we now have a stack of proofing baskets in the storage room. Flour is in the large bins, and there is a new bag of bread flour behind the grain shelf. If you plan to use the stone mill, give yourself extra time because it runs slower than the steel burr mill. The group usually brings their own aprons and bench scrapers, but we have some spares in the drawer by the prep station. Let me know if you want me to reserve the cooling racks too. We can adjust the oven schedule so your loaves go in right after the casserole group finishes. That should still leave plenty of time for a second bake if needed.
