Hey, you asked earlier about what I usually do when I want to try a new recipe and I totally forgot to answer until now. Honestly, I don't have a fancy process or anything. I mostly scroll through a few saved pages I keep bookmarked from way back, then I grab whatever looks like it might turn out okay with the stuff already in my kitchen. Last weekend I attempted that roasted pepper thing you mentioned and it was fine but I think I left it in the oven about four minutes too long because the edges got a little chewy. Next time I'll set a timer instead of trusting myself to remember. I also realized halfway through that I didn't have the right kind of pan, so I just used a shallow baking sheet and it worked well enough. Do you ever run into that problem where the recipe assumes you own every kitchen tool ever made? It's honestly kind of funny. Anyway, I found a simpler version that swaps in regular yellow onion for shallots and it tastes nearly identical. Not a huge deal either way. Also, completely random, but I saw a bird outside the window this morning that I could not identify for the life of me. It had a dull gray chest and a longer beak than the usual ones. I stood there with coffee for a solid minute trying to figure it out, and then it flew off. Nature is weird.

You know how sometimes you tell yourself you'll get to something later and then it completely slips your mind? That happened to me with a jar of pickles I opened and forgot in the back of the fridge. When I found it again the brine looked cloudy and I wasn't brave enough to test it, so into the bin it went. Anyway, no big loss. I did finally reorganize the top shelf though, and I moved all the sauces to one side so they stop falling over every time I reach for the mustard. Small wins. Oh, and I reorganized my linen closet too. Found a third pair of gray socks I didn't remember owning, so that was a pleasant surprise. It's strange how satisfying it is to fold everything into neat stacks. I probably won't keep up with it for more than a week, but at least it looks nice right now. On another note, I tried to fix a loose cabinet handle the other day with a tiny screwdriver, and somehow made it worse before making it better. Classic me.
