Indeed, that aligned with the previous appointment window. I intended to visit them earlier in the week but lost track of time. I believe we can reschedule the dates to another slot when we return. I was going to determine their arrival time but that falls on a separate day this week. Perhaps you should attempt a Colombian bandeja paisa. Fundamentally it's steak, rice, avocado and red beans, but enjoyable to prepare. ALTERNATIVELY, I might be any one of 4 incredible Peruvian meals: lomo saltado (with beef), ají de gallina (with chicken) or causa rellena (layered potato with savory filling). I've prepared them all, merely because my daughters doubted I could, and they are absolutely delicious.
