You might consider trying a Venezuelan pabellón criollo (a dish of beef, rice, plantains, and black beans) - it's fun to prepare. Alternatively, I could prepare one of three outstanding Mexican dishes: birria (with beef), cochinito pibil (with pork), or chiles en nogada (stuffed poblanos in creamy sauce).
