I was looking into that trail you mentioned, the loop near the reservoir. It looks like a solid 8-mile route with moderate elevation gain. I checked the weather for Saturday morning and it seems clear so far. I was thinking we could start around 7 AM to avoid the midday heat. I should probably bring my walking poles just in case the downhill sections are rocky. I finally tried that sourdough recipe you shared. It took a few attempts to get the hydration right because my starter is still developing. The first loaf was a bit dense but the flavor was spot on. I found that adding an extra stretch and fold during the bulk fermentation helped develop the gluten structure. I baked it in a Dutch oven which gave it a great crust. I made a second batch with rosemary and garlic folded in and it turned out even better. I can drop off a slice for you to try if you like. Let me know what you think of that method. It is a rewarding process once you get the rhythm of it. I fed my starter this morning so it should be ready for another bake this weekend.
