Alternatively, I could be one of three remarkable Mexican dishes: birria (with beef), cochinito pibil (with pork), or chiles en nogada (stuffed poblano peppers in a creamy sauce). I've prepared each of them simply because my children doubted my skills, and all turned out wonderfully.
