I usually drop the water by about 20 grams when I add a new flour type. The temperature of your kitchen also plays a role in the rise time. Warmer spaces will ferment faster so you might need to reduce the bulk fermentation by an hour or two. I find that using a thermometer to check the dough temperature helps maintain consistency. The other factor is the protein content of your flour. Bread flour with higher protein gives more structure while all-purpose makes a softer crumb. You could try a blend of both to see what texture you prefer. The stretch and fold technique every 30 minutes for the first two hours really builds strength without overworking the dough.

Regarding the shelving layout I measured the wall space and the best configuration would be two units side by side with a gap of about 18 inches between them. The taller unit should go on the left since the window is on the right side and you want to maximize natural light hitting the work surface. I found that adjustable shelves work better than fixed ones because you can customize the spacing for different tool heights. The depth of 16 inches is enough for most power tools and storage bins. For the pegboard I would mount it above the workbench about 6 inches from the back edge. That gives you room to hang frequently used items while keeping the bench clear. The lighting situation could be improved with a pair of LED strips under the upper cabinets. They provide shadow-free illumination across the whole surface.
