Welcome to this week's Friday Faves!
Like many of you, this week I avoided a lettuce-based salad until more info is known about the dreaded Cycolspora parasite, and keeping it as far from my digestive system as possible.
I raided my crisper and concocted an apple, cucumber, watermelon, red onion, peanut, and basil combination that was delightfully dressed with olive oil and rice vinegar.
Each bite paired perfectly with my grilled salmon and burrata caprese pasta salad.
As you can see above, my food-obsessed 14-year-old pup agreed!
