I finally got around to trying that lentil soup recipe you sent me last month. It turned out really well, though I swapped the spinach for kale since that is what I had in the fridge. The key was letting the onions caramelize slowly, which made the broth much richer than I expected. I added a bit of smoked paprika on top before serving and that gave it a nice warmth. The whole thing took about an hour from start to finish, and it made enough for four servings. I froze two portions for later. Next time I might try adding some diced sweet potato for extra texture.
