I finally tried that pasta recipe you sent me last week and it turned out better than I expected. I used San Marzano tomatoes for the sauce and let it simmer for about two hours which really deepened the flavor. The key was finishing the pasta in the sauce with a splash of the cooking water to help it emulsify. I added a bit of fresh basil and parmesan at the end and it came together really nicely. I also made a side salad with a simple lemon vinaigrette which balanced the richness. Next time I might try adding a pinch of red pepper flakes for some heat. Let me know if you have any other recommendations I should try out this month.

I also started growing some herbs on the windowsill and the basil is doing really well so far. The rosemary is a bit slower but it is starting to show new growth. I think the key is making sure they get enough direct sunlight and not overwatering them. I have been checking the soil moisture every other day and that seems to help keep them happy.

I wanted to follow up on our conversation about the hiking trip we were planning for next month. I checked the trail conditions for the Mt Whitney route and it looks like we will need to reserve permits well in advance. The ranger station suggested we aim for late June to avoid the peak crowds. I also looked into group camping options at the base and there are a few sites that can accommodate up to six people. Let me know if you want to go ahead and lock in the dates so we can start coordinating gear and transportation. I was thinking we could do a three day itinerary with an overnight at one of the higher camps to make the summit push more manageable. The weather should be stable that time of year but we will need to pack layers regardless. I have a good first aid kit and a water filtration system that I can bring along. Let me know your thoughts on the schedule and we can start firming things up.
