For the recipe you were asking about I used about half the sugar the original called for and substituted applesauce for the oil. The texture came out a bit denser but the flavor was much better. Next time I might try adding a teaspoon of vanilla extract to brighten it up. Let me know if you want the exact measurements I used.
I also tried roasting the vegetables at a higher temperature like you suggested and that made a big difference in caramelization. The edges got nicely browned without drying out the centers.
