the key is to let the dough rest for at least 30 minutes after kneading because that relaxes the gluten and makes rolling it out much easier without it shrinking back on you, i usually cover it with a damp towel and leave it on the counter, then when you roll you want to work from the center outward and rotate the dough between each pass rather than rolling in one direction only, also the temperature of your butter matters a lot because if it is too soft it gets absorbed into the flour and you lose the flaky layers so keep it cold but pliable, for the filling i find a mix of granny smith and honeycrisp gives the best balance of tart and sweet, you want to pre-cook the filling just enough to thicken the juices but not so long that the apples turn to mush so about 8 minutes on medium heat should do it, let the filling cool completely before assembling the pie otherwise the heat will melt the butter and make the crust soggy, one more thing brush the top crust with cream instead of milk for a richer color and sprinkle a little coarse sugar on top before baking, that creates a nice crunch

i think the best approach for the bookshelf is to mix vertical and horizontal stacks rather than lining everything up uniformly because it creates more visual interest and you can use the horizontal stacks as platforms for small plants or picture frames, also you should leave some negative space so it does not look cluttered, about 20 percent empty space is a good target, for the color arrangement you could try organizing by spine color in a gradient pattern which looks really striking when done right, or you could group by topic and then arrange each group by height, i personally prefer the rainbow gradient method because it works well with any mix of book sizes and the visual impact is immediate when you walk into the room, just make sure the heavier books are on the bottom shelves for stability and if you have any very tall books you might need to adjust shelf heights accordingly, also consider adding some lighting like a small LED strip under one of the middle shelves to highlight the arrangement
