Yeah I think the timing works out well for Saturday. The roast needs about three hours in the oven at 325 so if we put it in around 2 we can eat by 5. I was thinking roasted vegetables on the side maybe carrots and potatoes with rosemary. The salad can be prepped ahead just don't add the dressing until we sit down. Let me know if anyone has dietary restrictions I should plan around. I also wanted to try making a bread pudding for dessert since I have some leftover brioche. It is simple to put together and can bake while we eat dinner. Let me know what you think about that plan. I can pick up everything Friday afternoon so we are ready to go Saturday morning. We should have enough for six people easily.

We looked at a few different trail options for next weekend and settled on the Cedar Ridge loop. It is about six miles total with moderate elevation gain so it should take us around three to four hours with breaks. The forecast looks clear so far but I will check again closer to the day. I will bring sandwiches and snacks for everyone. Make sure you have good hiking shoes since some sections can be rocky. We will meet at the trailhead parking lot at 8 AM to get an early start before it gets too warm. There is also a nice stream about halfway where we can stop and rest. Should be a good day out. I will send directions to everyone later this week.
