Regarding the flooring I would suggest going with something that has a bit of texture rather than smooth finish especially if you have pets. It hides the wear patterns much better over time. For the kitchen layout the peninsula idea should work well as long as you leave enough clearance for the dishwasher to open fully. We measured ours at 38 inches and it felt tight when we had people over. I will send you the measurements we used for the cabinet heights if you want to reference them.
