I think letting the dough rest for at least thirty minutes before rolling makes a real difference in how the crust holds together. For the filling I usually use a mix of sharp cheddar and gruyere because it melts smoothly without getting greasy. You can prep everything the night before and bake it when you are ready. Make sure your butter is very cold when you cut it into the flour. If the dough feels sticky dust it lightly with flour but do not overwork it. We finally went with the lighter grey for the living room walls and it really opened up the space. The natural light from the south windows makes it feel much larger than before. We are planning to add some shelving on the far wall for the plants and a few books. The floor trim still needs a second coat but we ran out of paint.
