I think the key is letting the dough rest longer than you think. I tried it last weekend with the sourdough starter you gave me and it made a big difference. The hydration level was around 75 percent which gave it a nice open crumb structure. I baked it at 450 with steam for the first 20 minutes and it came out with a great crust. Next time I might add some rosemary and sea salt on top before baking. Also I found that using a Dutch oven really helps maintain the heat distribution. Let me know if you want me to share the exact measurements I used. The bulk fermentation took about 4 hours at room temperature and then I did a cold proof in the fridge overnight. The scoring pattern was a simple cross but I want to try a wheat stalk design next time. I have been reading about different flour blends and think adding a small amount of spelt could add a nice nutty flavor.

So regarding the community garden layout I think we should go with raised beds this year. The soil in the back section is still too compacted from the construction last fall. I measured the space yesterday and we can fit about 8 beds that are 4x8 feet each with decent pathways in between. We will need to order the cedar planks soon if we want to have them ready by planting time. I also suggest we set up a rainwater collection system near the shed. Let me know your thoughts on the layout and I will start drafting a plan we can share with the group. The compost bins we built last year are working well and we should have plenty of material ready by spring. I am thinking we can plant tomatoes peppers and basil in the sunniest beds and put the leafy greens in the partial shade area. We should also consider adding a small herb spiral near the entrance for easy access.
