I have been testing different approaches to the dough and the key is letting it rest longer than most recipes suggest.
I usually let it sit for about two hours at room temperature, covered with a damp cloth. That extra time really changes the texture.
I use a combination of all-purpose and bread flour to get the right balance of chewiness and structure.
For the sauce, San Marzano tomatoes crushed by hand give the best flavor without being too acidic. I add a pinch of sugar and some fresh basil near the end.
The cheese should be fresh mozzarella, patted dry and torn into pieces, not shredded. I preheat the oven as hot as it goes, around 500 degrees, and use a preheated baking stone.

I checked the trail conditions for next month and the forecast looks favorable for that weekend.
The loop trail we talked about is about eight miles with moderate elevation gain, and there is a nice lake about halfway where we can stop for lunch.
I would recommend starting early, around 6 AM, to avoid the afternoon heat and give us plenty of time to enjoy the summit views.
We should each carry at least two liters of water and some high-energy snacks. I will bring my camping stove so we can have hot tea at the lake if the weather is cool.
The trailhead parking requires a pass, so I will pick one up ahead of time. I also looked into nearby camping options if anyone wants to make it an overnight trip.
