So I finally tried that pasta recipe you sent over and it turned out really well. I was a little worried about the sauce being too thin but simmering it longer made all the difference. I added a bit more garlic than called for and used fresh basil from the garden. The whole thing came together in about 35 minutes which was perfect for a weeknight. My family asked me to make it again next week so I think it passed the test. I did substitute the cream with a lighter option and it still felt rich enough. Next time I might add some roasted cherry tomatoes on top for extra color. The salad on the side was just a simple arugula thing with lemon vinaigrette.
