From the Experts: Making Perfect Crosshatches Below are helpful tips from our Grill Masters in the Taste of Texas kitchen, who've grilled over 1,000,000 each. Set a two-stage fire with one side of the grill on high and the other medium/low. Place the steaks on the hotter side by searing for 2 minutes. Rotate the steaks 90 degrees and sear another 2 minutes to create diamond grill marks. Flip and repeat on the other side for a total of 8 minutes of searing. Keep a spray water bottle handy to address any flare ups. Transfer the steaks to the lower heat side of the grill, making sure to line up the grill marks to finish cooking. Use a grilling thermometer to check for doneness (ex. 130 degrees for medium rare) Top your steaks with Herb Garlic Steak Butter for a melt in your mouth finish and allow them to rest for 5 minutes before cutting in.
