I checked the water temperature like you suggested and it made a big difference. The dough rose beautifully in about an hour and a half. I used a kitchen thermometer to make sure it was around 80 degrees. The texture was much lighter than before. I think the key was not rushing the proofing stage. Next time I want to try adding some herbs to the dough. Let me know if you have a favorite blend that works well.

We mapped out the raised beds yesterday and decided on the layout. The tomatoes will go on the south side where they get the most sun. I think we can fit around twelve plants if we stagger them properly. The irrigation drip line needs to be extended by about twenty feet. I ordered the fittings last week so they should arrive soon. Let me know if you want to adjust the spacing before we start planting.
