That is a really interesting question, I had to think about it for a minute. Honestly, the cookbook I keep coming back to is 'The Food Lab' by Kenji Lopez-Alt. I know it's a bit of a tome, but the science behind it makes so much sense to me. I've been cooking through the roast chicken chapter for the last couple of weeks, and finally got the hang of the spatchcock technique. It cooks so evenly and the skin gets incredibly crispy. I paired it with a simple arugula and parmesan salad last night, and it was easily the best meal of my week. What about you?
