I think the best approach for the team offsite would be to split into smaller groups for the first two days
and then come together on the third day for presentations. That way, everyone gets a chance to contribute deeply to their specific topics before sharing with the larger group.
We used a similar format last year and it worked well, although the venue was a bit cramped. I have been looking at a few spaces that offer breakout rooms along with a main hall.

I finally got around to reading that book you recommended about urban gardening.
