Hey thanks for the note about the trail conditions out at Eagle Peak last weekend. I finally made it out there on Tuesday and honestly it was even better than you described. The switchbacks were a bit muddy in the first mile but after that it dried out nicely. I saw three deer just off the main path near the old oak grove which was pretty magical. The summit views were completely clear despite the forecast calling for clouds. I ended up staying up there for almost an hour just taking it all in. Next time I'm definitely bringing better snacks because I ran out of water way too early and had to ration. Let me know if you want to join for a repeat trip maybe next month when the leaves start changing. I've heard the fall colors up there are incredible. Also I tried that new bouldering gym downtown last night and the routes were really well set. I think you'd enjoy their slab wall especially NcCMxrOTY8.

I finally attempted that sourdough recipe you sent me and I have to say the results were surprisingly edible for a first try. The starter took about five days to get really active and I was worried I'd killed it at one point but it bounced back. I baked it in a dutch oven like you suggested and got a decent ear on the crust. The crumb was a bit dense but the flavor was spot on with that nice tangy finish. My kitchen looked like a flour bomb went off but totally worth it. I'm going to try again this weekend with a higher hydration dough and see if I can get those big irregular holes you showed me in your photos. The whole process is really meditative actually kneading and waiting and watching it rise. I've been getting up early just to check on the starter which feels weirdly satisfying. Let me know if you have any tips for shaping without degassing too much.
