You asked about that sourdough starter I have been neglecting. Well, I finally fed it and baked a loaf last night. It turned out way better than I expected. The crust was perfectly crispy and the inside was soft with just the right amount of chew. I used a mix of bread flour and whole wheat, and I think that made all the difference. I let it proof overnight in the fridge and baked it first thing in the morning. The smell filled the whole house. I sliced it up for breakfast with some butter and honey.
