You asked about how I manage to get the crust on my roast chicken so crispy. I have been using a dry brine method where I salt the bird and let it rest uncovered in the fridge overnight. The salt draws out moisture from the skin, which helps it crisp up in the oven. I also add a small amount of baking powder to the salt mixture, which helps with browning. I start the oven at 425 and then reduce to 375 after the first 20 minutes. I let the chicken sit at room temperature for about 30 minutes before roasting. The key is making sure the skin is thoroughly dry before applying the seasoning. I used rosemary, garlic powder, and black pepper along with the salt this time. Let me know if you decide to give it a try, I think the results will speak for themselves. I have been tweaking the method for a few months now and this approach gives the most consistent outcome.

One thing I forgot to mention is that I place the chicken on a wire rack inside the baking sheet so air circulates underneath. That makes a big difference for the underside crispness. I also avoid opening the oven door during the first half of cooking to keep the temperature steady. Let me know if you want any other details about the timing or seasoning ratios.

I checked the progress on the raised beds this morning and the soil temperature is looking good for planting. I mixed in some compost and organic matter last week, and the structure seems to be holding up well. I am planning to put in tomatoes, peppers, and some herbs once the nights stay consistently warm. The drip irrigation system I installed should make watering much easier this season. I also added some marigolds around the border to help with pest control. I will need to stake the tomatoes once they get going and I am thinking about using cages this year instead of individual stakes. The soil pH came back at 6.5 which is ideal for most vegetables. Let me know if you want to come by and see the setup before you start your own. I think we have got a good system going that could be adapted to your space.

I also wanted to mention that I found a good source for organic mulch that will help retain moisture during the hotter months. The delivery is scheduled for next week and I am planning to apply a two inch layer around the base of each plant. I think this will make a noticeable difference in how often we need to water. Let me know if you want the contact information for the supplier.
