Hey thanks for the note earlier. I finally tried that slow-roasted chicken recipe you mentioned and it turned out way better than I expected. The skin got really crispy and the meat stayed juicy. I added a little extra thyme and lemon zest. My sister came over and we had it with roasted potatoes and a simple salad. She asked for the recipe too. I told her I got it from you and she said she wants to try it next week. Let me know if you have another one like that but maybe with a different herb profile. I think rosemary would work well. I was telling my brother about that documentary you recommended and we finally watched it last night. Honestly the cinematography was incredible and the pacing kept us both hooked. He kept asking questions during the whole thing and I had to pause a couple times. I think you would enjoy the director's earlier work too if you have not seen it.
