I went ahead and tested the new biscuit recipe, and the second batch came out much better than the first.
I think I rushed the mixing the first time, so the dough turned tough and the texture was off.
This time I let everything rest for a few minutes, and that seemed to help more than I expected.
I am still adjusting the oven timing because mine runs hotter than what the dial suggests.
