Honestly, it was perfect — not too crowded on a Tuesday morning, and the weather held up even though the forecast said scattered showers. I finally tried that sourdough recipe you sent a while back. It took three tries to get the hydration right — first one was basically a brick, second was too sticky to shape, and the third came out pretty decent with a nice ear and decent crumb. I used a mix of bread flour and whole wheat and let it cold ferment in the fridge for about eighteen hours. The flavor was tangy but not overpowering. My starter is still young so I'm feeding it daily to build more strength. I think the key was lowering the hydration to about seventy-two percent and being more patient with the bulk fermentation. My kitchen counter runs warm so it moved faster than the recipe said. I'm going to try adding some toasted walnuts and rosemary to the next loaf. My neighbor traded me a slice for some of her homemade jam which felt like a win.
