Yeah I totally get what you mean about getting hooked on those trail runs. I started doing the early morning ones near the ridge trail just to beat the heat and honestly the views at sunrise are completely worth it. The wildflowers have been incredible this season and I even spotted a couple of deer last week. My friend keeps asking me to try the full loop but I am still working up to that distance. The elevation gain on the back half is no joke. I think if I pace myself better and bring more water I could probably manage it by next month. The dogs love it too which makes it even more fun. I finally tried making that mushroom risotto recipe you sent me last month and it turned out way better than I expected. I was a little nervous about the whole constant stirring thing but honestly it was kind of meditative once I got into the rhythm. I used a mix of cremini and shiitake mushrooms and added a little thyme and rosemary at the end. The trick really is using warm broth and adding it slowly. I served it with a simple arugula salad with lemon vinaigrette and it was perfect. My partner had two servings which is always a good sign. Next time I want to try adding some roasted butternut squash to it. Let me know if you have any other recipes you recommend I would love to try something new soon.
