I finally got around to trying that bread recipe you sent me last month and honestly I'm kicking myself for waiting so long. The crust came out perfectly golden and the inside was soft with just the right amount of chew. I used a little less salt than it called for and let it proof an extra hour because my kitchen runs cool. My family devoured the whole loaf in about twenty minutes. I'm already planning to make another batch this weekend maybe with some rosemary and sea salt on top. Thanks again for passing that along it is definitely going into my regular rotation. One thing I learned the hard way is that you really need to weigh the flour instead of scooping it. The first time I made it the dough was way too dry and I had to keep adding water until it felt right. That second attempt with a scale made all the difference. If you don't have a kitchen scale I highly recommend picking one up they are cheap and totally worth it for baking.

I was looking through old photos on my phone last night and came across that set from the hiking trip we did last spring. The lighting that day was incredible especially right around sunset when everything turned that warm gold color. I forgot how clear the sky was and how you could see the mountains in the distance without any haze. It made me want to plan another trip soon even if it is just a day hike somewhere close by. There is something about being out on the trail that resets my whole mindset.
I have been trying to get outside more on weekends even if it is just a walk around the neighborhood. The fresh air and quiet help me clear my head after a busy week. I found a small nature preserve about fifteen minutes from my place with a loop trail that takes about an hour to walk. It is nothing dramatic but it is peaceful and I usually have the place to myself early in the morning. I have started bringing a small notebook to jot down random thoughts or sketch a little. It is surprising how much more observant I feel when I am not staring at a screen.
