Hey, I finally got around to trying that sourdough starter recipe you sent me last month. It took a few tries to get the hydration right but the third batch actually bubbled up nicely. I ended up baking a small loaf last weekend and it had a decent crumb even if the crust was a bit thick. My kitchen smelled amazing for hours. I think next time I will let it proof a little longer because the flavor was still pretty mild. The whole process is way more forgiving than I expected once you get past the first week of feeding. Anyway I just wanted to let you know it worked out and thanks for the tip about using filtered water instead of tap. That made a noticeable difference. So I finally watched that documentary you recommended about the deep sea exploration teams and honestly it was way more intense than I expected. The footage of the underwater canyons was breathtaking and I had no idea how much coordination goes into those dives. The part where they talked about the pressure changes and how the crew has to decompress for hours stuck with me. It made me think about how much of our own planet we still have not seen. I ended up reading a few articles afterward about the different species they discovered near the vents. Some of those creatures look like they are from another world entirely. Anyway it was a great recommendation and I am glad I finally sat down to watch it. Let me know if you come across anything else good.
