You were right about the elevation gain being steep in the first mile, but once you get past that ridge the views open up completely. I stopped for lunch at that big flat rock overlooking the valley and just sat there for almost an hour. The weather was perfect too, not too hot and just a slight breeze. I'm already planning to go back next weekend with my camera. Have you been up there since the park cleared that fallen tree from the path? I noticed they'd cut it up and moved it off to the side. Made the crossing much easier. I also saw a family of deer on the way down, which was a nice surprise. I finally tried that sourdough starter recipe you sent me last month. It took a few tries to get the hydration right — I think my kitchen is a bit cooler than yours so the fermentation was slower than expected. But the third batch came out really well. The crust had that perfect crackle when it came out of the oven and the crumb was light with nice irregular holes. I brought a loaf to the dinner party on Saturday and everyone asked for the recipe. I added a bit of whole wheat flour to give it more depth and used a Dutch oven for the first half of the bake. My shaping still needs work though — it came out a bit lopsided. Do you have any tips for getting a tighter boule shape? I have been watching some videos online but they make it look so easy and mine always spreads out a bit too much on the bench.
