I think the key to getting that roast beef tender is to let it rest properly after cooking. I usually take it out of the oven when the internal temp hits about 125°F for medium rare, then tent it loosely with foil for at least 15-20 minutes before slicing. The carryover cooking will bring it up another 5-7 degrees, and resting lets the juices redistribute so they don't all run out when you cut into it. If you slice it too soon, you'll end up with dry meat and a puddle of juice on the cutting board. For seasoning, I keep it simple with kosher salt, fresh cracked pepper, and a little garlic powder rubbed all over the surface the night before. Leaving it uncovered in the fridge overnight really helps dry out the surface so you get a nice crust when you sear it. The other thing that made a big difference was switching to a cast iron skillet for the initial sear. I get the pan screaming hot with a high smoke point oil like avocado oil, then sear each side for about 2-3 minutes until deeply browned. That crust adds so much flavor. After that I transfer it to a rack in a roasting pan and finish in the oven. Using a meat thermometer is really the way to go instead of guessing by time. I got a simple digital one for around fifteen dollars and it takes all the guesswork out.

We did the Pine Creek Trail last weekend and it was really nice this time of year. The trail is about 4 miles round trip with a moderate incline, nothing too steep but you'll want good shoes because there are some rocky sections. There's a creek that runs alongside most of the trail and we found a great spot to stop for lunch near a small waterfall about halfway up. The canopy cover is pretty dense so it stays cool even when it's warm out. If you plan to go, I'd suggest starting early in the morning because the parking lot fills up fast especially on weekends. We got there around 7:30 and there were only a few cars, but when we came down around noon the lot was completely full and people were parking along the road. Also bring bug spray because there were some mosquitoes near the water. Overall it's a good moderate hike with nice views at the top that make the effort worthwhile. There is a bench at the summit where you can sit and take in the view of the valley below. I packed sandwiches and fruit and we ate up there before heading back down. The whole trip took us about 3 hours with the lunch break included. If you decide to go let me know and I can give you directions to the trailhead.

The trail surface is mostly packed dirt with some exposed roots and rocks so it's not suitable for strollers or anyone with mobility issues. There are a few sections where you have to step over larger rocks but nothing that requires scrambling. I saw families with kids probably around 8 or 9 years old doing it without any problems. The elevation gain is around 600 feet total so it's a steady climb on the way up but not too punishing. We took plenty of water and stopped a few times to catch our breath and take photos. The wildflowers were just starting to bloom near the top which added some nice color to the landscape.
