Hey, yeah I finally tried that sourdough starter recipe you sent me last month. It took a few tries to get the hydration right honestly. The first one came out way too sticky and I almost gave up. But I let it ferment a bit longer on the counter and fed it twice a day for about a week and it started bubbling like crazy. The first loaf was a bit flat but the crust was actually pretty good. I've made three loaves so far and the last one actually looked like something you'd see in a bakery window. My kids loved tearing into it while it was still warm. I'm thinking about trying a whole wheat version next time or maybe adding some olives and rosemary. Anyway thanks for pushing me to try it. I'd forgotten how satisfying baking from scratch can be. I finally watched that documentary about the Thailand cave rescue you recommended. The full story was so much more intense than I expected from the clips I'd seen online. The engineering challenges alone were mind boggling. I had no idea how many different teams from around the world showed up to help. The divers were incredible risking their lives like that. I kept thinking about how calm the kids must have stayed through everything. You mentioned there was a book about it too. I might pick that up because the film skipped some of the logistics details.
