I finally got around to trying that recipe you sent over and it turned out way better than I expected. The sauce was a little thinner than yours probably because I used a different brand of tomatoes but the flavor was still really good. I added a bit of extra garlic because you know I can't resist and it gave it a nice kick. The whole thing came together in about forty minutes which was perfect for a weeknight. I think next time I might try it with the fresh herbs you recommended instead of dried just to see how much difference it makes. Your tip about letting it rest for a few minutes before serving definitely helped with the texture. I served it with some crusty bread and a simple side salad and it felt like a proper meal.
