Hey, I finally got around to trying that sourdough starter you gave me last month. It took a few days to really get going but once it did the bubbles were incredible. I fed it twice a day and kept it on the counter near the window where it stayed warm. The first loaf came out a little flat but the flavor was there — tangy and a bit nutty. My neighbor said it reminded her of the bread her grandmother used to make. I think I overproofed the second attempt because it spread out like a pancake. Still tasted good toasted with butter though. I’ve been reading about different hydration levels and I’m going to try a stiffer dough next time. The starter itself smells like ripe fruit and yogurt now which I guess is a good sign. Anyway I just wanted to share because you were the one who convinced me to try it. I’ll drop off a loaf for you once I get the shape right.

You know that hiking trail we talked about last weekend — the one with the old fire tower at the top. I finally went yesterday morning and it was exactly what I needed. The climb was steady for about a mile and a half then it opened up onto this ridge with views of the valley below. I sat up there for almost an hour just watching the clouds move. The tower itself is closed off but you can get close enough to see the structure. I saw a deer on the way down just standing still watching me pass. I brought way too much water but I'd rather have extra than run out. The trailhead had a small parking area maybe six cars. I talked to a guy who said he hikes it every weekend and he pointed out another trail that connects to a waterfall loop. I think I'll try that one next time.
