I think the key to a good sear is making sure the pan is hot enough before you add the meat. You want that sizzle right away. I have been experimenting with different oil temperatures and found that waiting until the oil just starts to shimmer gives the best crust. Also patting the surface dry with paper towels makes a big difference. Any moisture on the surface will steam instead of sear. I usually let the meat rest at room temperature for about 20 minutes before cooking too. It helps everything cook more evenly. What kind of pan do you use. I have had good results with cast iron but stainless steel works well too if you get the technique down. The other thing I have been trying is a reverse sear method where you cook it low and slow first then finish with a hot sear. That has been working really well for thicker cuts.

The internal temperature comes out much more consistent across the whole cut. I have been using a meat thermometer to monitor it closely and that has helped a lot too. Let me know what you think.

We finally got around to reorganizing the garage last weekend and it feels so much better. We put up some shelving units along the back wall and cleared out a bunch of stuff we have not touched in years. There was an old workbench that was taking up way too much space so we disassembled it and now we have room to park both cars inside. The next project is to paint the walls and maybe put down some of those interlocking floor tiles. Have you done anything like that. It is amazing how much more usable the space is when things are organized. We are thinking about adding some pegboard for tools too. I found a great set of hooks and bins that would keep everything accessible. The whole process took longer than expected but the result is worth it. We can actually walk through without stepping over boxes now. Let me know if you want to come take a look sometime.

The other thing we did was sort through all the holiday decorations and consolidate them into labeled totes. That saved a ton of space. I think we ended up donating about three bags of stuff we just never used. It feels good to clear out the clutter and start fresh.
