I think the best way to approach the garden project is to start with the soil composition first. We tried last year just planting directly and the drainage was a nightmare. If we mix in some compost and perlite before we put anything in the ground, we should get much better results. Also, I was looking at the forecast and it looks like we might get an early spring this year so we should probably start preparing the beds sooner rather than later. I picked up a soil testing kit from the hardware store and the PH levels in the back plot are way off. We need to add some lime to balance things out before we even think about seeds. Let me know what you think about the layout I sketched out. I was thinking we could do tomatoes along the fence line and herbs closer to the kitchen door so they are easy to grab while cooking. The kids want to try growing pumpkins again which is ambitious but I am willing to give it another shot if we amend the soil properly this time. I also found a great deal on a rain barrel at the garden center so we can finally set up a proper watering system without running up the bill. If you have time this weekend I could use a second opinion on where to place the raised beds. The sunlight shifts a lot more than I expected now that the neighbor trimmed those big oaks.

Hey thanks for asking about the lasagna recipe. I ended up tweaking it quite a bit from the original version. Instead of using the standard ricotta layer I swapped in a mix of cottage cheese and a little cream cheese for extra richness and it turned out way better than I expected. The trick is to drain the cottage cheese overnight so the lasagna doesn't get watery. I also added a pinch of nutmeg to the cheese layer which sounds weird but it gives it that restaurant-quality depth. For the sauce I used a combination of crushed san marzano tomatoes and a small can of tomato paste to thicken it up without having to simmer for hours. I layered it with no-boil noodles and let it rest for a full twenty minutes before cutting so the slices held together perfectly. My brother-in-law who never compliments anything said it was the best lasagna he has had in years. I am thinking about trying a white version next time with spinach and mushrooms.
