yeah I think the raised beds are really the way to go for carrots and radishes, the soil drainage is so much better than the ground beds. we built ours with cedar planks last spring and the difference in root development was noticeable within a few weeks. just make sure you're not overwatering, that was my main mistake at first and the roots started splitting. I added some compost tea halfway through and that seemed to help with the nutrient uptake.

the sourdough starter definitely needs more time on the counter before refrigeration, I'd say at least another week of regular feedings to get the yeast activity where it needs to be. I had the same issue with mine, it was too sluggish in the fridge. once I kept it out for ten days with daily discard and feed, the rise became really consistent and the flavor deepened nicely. the key is to watch for the bubbles and that tangy aroma before moving it to the cold.
