I think the best approach for the brisket would be to season it the night before and let it rest in the fridge. That way the rub has time to penetrate the surface a bit more. I usually keep my smoker around 225 degrees and plan for about an hour and fifteen minutes per pound. You will want to wrap it in butcher paper once the bark sets, which usually happens around the four hour mark. Then you can let it go until it reaches 203 degrees internal. After that it needs to rest for at least an hour before slicing. I have found that letting it rest in a cooler wrapped in towels works really well. The leftovers also make great sandwiches the next day if you have any left. I have tried a few different rubs over the years and the one with brown sugar and paprika is still my favorite. We are planning to head up to the cabin next weekend if the weather looks good. I need to check the forecast closer to the date but I think it should be nice. We were thinking of doing some hiking on the trails near the lake and maybe bringing the kayaks if we can fit them on the car. Let me know if you and your family want to join us. We have plenty of space at the cabin and the kids always have fun playing in the yard. There is a farmers market on Saturday morning that we usually stop at for fresh produce and baked goods. It should be a nice relaxing weekend away from everything. I also want to try out that new grill I picked up last month so I am planning the menu now.
