Hey, yeah I finally got around to trying that new ramen place you mentioned. Honestly, the broth was really rich but maybe a tad too salty for me. I did love the chashu though, it was melt-in-your-mouth tender. I've been experimenting with sourdough starter again. My first attempt smelled like acetone and I tossed it. This time I'm using a whole wheat flour base and feeding it twice a day. It's looking much better, lots of bubbles and a nice tangy smell. The weather has been so humid lately it's hard to get the hydration right though. I'm trying to get a good ear on the crust. My last loaf was pretty flat but the crumb was decent. I'll drop off a slice for you to try if this batch works out. Let me know what you think about the hydration level. I also tried a new cold brew recipe using a Japanese drip tower. It was super smooth.
