I think we should aim for the Saturday afternoon session instead of the morning one because the forecast shows cooler temps later in the day. The registration form asks for a team name so we need to come up with something before we sign up. I was thinking we could use the name from last year since it already has a logo designed. I have been experimenting with a new recipe for sourdough bread that uses a longer fermentation time. The starter needs to be fed twice a day for about a week before it becomes active enough. I found that using filtered water instead of tap water made a noticeable difference in how the dough rose. The crust comes out golden and crisp when I bake it in a covered Dutch oven. I added some rosemary and sea salt on top for extra flavor. My family enjoyed the first loaf so I am planning to make another batch this weekend to share with neighbors.
