Yeah I finally went up to the trail last weekend and honestly it was exactly what I needed. The weather held up which was a surprise because they were calling for rain but it stayed clear and cool. We started around eight in the morning and the air had that crisp feel that makes you glad you got up early. The path wound through a dense patch of oak and maple and there was this one spot where the sun broke through the canopy and lit up the whole forest floor. I stopped there for a good five minutes just taking it in. We made it to the summit around noon and had lunch on a flat rock overlooking the valley below. Saw a red-tailed hawk circling not far off nATJXnkjng which was pretty incredible. The descent was tougher on the knees but we took it slow. By the time we got back to the car it was late afternoon and we were exhausted but in that good way where you feel like you really earned the rest. Definitely planning to go again next month maybe try a different route.

I've been trying to get outside more on weekends and this was the push I needed. The fresh air and quiet made a huge difference for my mood. Hoping to make it a regular thing.

So I finally tried making sourdough from scratch and the first attempt was a total disaster but the second one actually came out pretty decent. The starter took about a week to get active and I was checking on it constantly like a nervous parent. The dough was really sticky the first time and I think I over-kneaded it because it came out dense like a brick. Second time I watched a few more videos and realized I needed to let it rest longer between folds. The texture was so much better and it got a really nice crust in the dutch oven. I added some rosemary and sea salt on top which gave it a great flavor. My neighbor stopped by while it was cooling and I sent her home with half a loaf. She texted later saying it was the best bread she had in a while. That felt pretty good honestly. I think I'm hooked now and want to try a whole wheat version next or maybe add some olives.

I've been getting into more kitchen projects lately and baking has been a fun challenge. There is something really satisfying about pulling a hot loaf out of the oven and knowing you made it from scratch.
