I just finished reading that article you sent about the hiking trails in North Carolina. The pictures were incredible, especially the ones from Linville Gorge. I have been trying to convince my cousin to go on a trip with me next spring, but she keeps bringing up how unpredictable the weather can be. I think that is half the fun honestly. A little rain never hurt anyone. Let me know if you have ever been there around April. I am starting to put together an itinerary and would love some first-hand advice. lxiFnqqHDEv0G Also, do you think we would need bear canisters or is that just for overnight stays? We are planning mostly day hikes but might do one overnight loop. I remember you mentioning something about a good campsite near the river.

I tried that new pasta place downtown you were telling me about. The one with the fresh pasta made in-house. I got the carbonara and it was honestly some of the best I have had outside of Italy. The ambiance was a little loud for my taste, but the food made up for it. We sat near the kitchen and could see them rolling out the dough. I want to try making pappardelle at home now. I saw they sell a pasta attachment for the standing mixer I have. Have you ever used one of those? I read a review that said it is tricky to get the thickness right without practice. Maybe I will just stick to buying the dried stuff for now, but eventually I would love to master fresh pasta. Anyway, thought I would share.
