Yeah I finally tried making sourdough from scratch last weekend. It actually turned out way better than I expected. The starter took about a week to get really active and bubbly. I fed it twice a day at first and then once a day once it stabilized. The first loaf was a bit dense but the second one had those nice airy pockets you see in bakery bread. I used a simple recipe with just flour water salt and a little bit of olive oil. The key is letting it rise long enough ku6MqLRMU7Tc3 and not rushing the process. My kitchen smelled amazing while it was baking. I think next time I will try adding some rosemary or maybe some olives to change it up a bit. Let me know if you want me to share the recipe I used.
Oh also I found that using a kitchen scale instead of measuring cups made a big difference in consistency. The hydration level is much easier to control that way. And I learned that you can actually keep the starter in the fridge if you only bake once a week or so.

I finally watched that documentary about ocean exploration that you mentioned. It was really fascinating especially the footage from the deep sea trenches. I had no idea there were bioluminescent creatures that produce their own light at those depths. The part about the hydrothermal vents was incredible too seeing how entire ecosystems thrive without any sunlight. It makes you realize how much of the ocean we still have not explored. The filmmakers did a great job of balancing the science with really stunning visuals. I ended up staying up later than I planned because I kept wanting to watch one more segment. Let me know if you have any other recommendations along those lines I am definitely in the mood for more nature and science documentaries after that one. The cinematography was absolutely breathtaking especially the time-lapse sequences of coral reefs at night.
